Pekasam is one of the methods how the earlier Malay people did to preserve the fish or meat. During earlier days, villagers depended on rivers and pond for their source of fish supplies. During certain season, the amount of fish caught can be more than what the family can eat. Since there were no electricity and refrigerators available to keep the fish fresh, they will preserve the fish with salt and sour asam gelugor ( garcinia atroviridis ) to make it last longer. Asam gelugor fruit are very sour, usually they are thinly-sliced and dried before it was used as one of the fish’s fermented ingredients. There are many ways and recipes used in making Ikan Pekasam, usually the longer the fish were fermented, the tastier it becomes. Vias Ikan Pekasam is made from selected high quality fresh water fish called Lampam, it is marinade with fried raw rice to produce nice tantalizing smell and great taste when the fish is fried.
